Environmental sustainability is a priority for companies and consumers alike. Coasun technology offers a way of addressing this issue by giving customers the ability to tailor their own oil blend. By utilizing oils derived from locally grown crops and sustainable sources, Coasun technology gives companies the ability to support local agriculture, the Agri-food industry and rural economies in the manufacturing of their shortening.
Economical solutions are also provided in this way, where the cost and availability of different oils can determine which blends are made. Moreover, since Coasun contains 35-40 % water, oil usage can be “stretched” 35-40 % and less total fat is needed to produce a product of equal quality. For Coasun application, bakery customers report that mixing time is reduced by up to 50 % by using the Coasun shortening alternative versus other shortenings. The resultant energy savings can be significant and increase the profitability of customers using Coasun products and their carbon footprint.
In terms of product stability and quality, Coasun customers have noted that for specific applications, such as fresh cookies, a significant increase in shelf life has been achieved.
Production efficiency:
Coasun technology requires a relatively inexpensive and simple manufacturing system, which enables production at any scale. Coasun manufacturing does not involve crystallization and thus crystallizers are not required. The process basically requires efficient mixing without too much air incorporation. Manufacturing also does not require product cooling and thus “hot fill” technology can be used. Heating, mixing and cooling (if required) methods are specific for Coasun technology.
When incorporating Coasun into bakery products, all ingredients are mixed in a single step. Monoglyceride gels also provide high lubricity, more efficient air incorporation, and lower the amount of work necessary for processing of dough mixtures.
