For those at home bakers that don’t have a scale….here’s a recipe for you! Utilize Ontario’s fresh strawberries and rhubarb for this delicious cake to enjoy with vanilla frozen yogurt or coffee or tea
2 cups all purpose flour
1 cup rhubarb
1 cup strawberries
1 cup CoasunSA
2 cups white sugar
1 tsp. baking soda
2 tsp. cinnamon
1 egg
1 tsp. vanilla extract
Add all ingredients except for the strawberries and rhubarb in your KitchenAid mixing bowl. Mix on low speed for 1 min. Add fresh strawberries and rhubarb and mix until just blended. Distribute batter in loaf pans or a bundt cake pan. Sprinkle brown sugar and cinnamon on top. Bake at 350˚F for 35-45 min until toothpick inserted in cake comes out clean (watch out for strawberries and rhubarb when checking the cake!). Enjoy!!
