Here is a quick kitchen scale recipe for a healthier yet decadent chocolate chip cookie made with Coasun’s shortening alternative.   A recipe for a control cookie made with a palm fat shortening is also included for nutritional comparison purposes.

% moisture adjustment based on shortening weight.

Control Method:

  1. Equip KitchenAid mixer with paddle.  Add shortening, sugar, start mixer on lowest speed, increase to speed 5.  Cream for 3 minutes.
  2. Add liquid egg, and mix on speed 3 for 1 minute.
  3. Preblend dry ingredients.  Add to mixer.  Mix on lowest speed, then increase to speed 3 for 2 minutes.
  4. Add chocolate chips and mix on low speed until incorporated
  5. Use #40 scoop and deposit 30g onto baking tray.  Bake 13 minutes at 350F.

Coasun Process Changes:

  1. Equip KitchenAid mixer with paddle.  Add all ingredients except the chocolate chips to the mixing bowl (Single stage mix). Start on low speed and slowly increase to speed 3 for 1 min.
  2. Add chocolate chips and mix on low speed until incorporated
  3. Use #40 scoop and deposit 30g onto baking tray.  Bake 13 minutes at 350F.

    Where is the recipie? I need something like 1/2 C of this or 1 C of that…I like the way that you put it for the apple german cake! Do not make me change from grams to Cups! Thanks a lot

      Some people are more scientific about the whole process and use scales in their kitchen. I will convert this recipe to cups for you and post it in that format for you to use @ home.       Fernanda, please check back to the same recipe. I have converted the weights into cups. This in an approximation so the cookie dough may be a bit sticky initially. Double the batch if you want to use a whole egg. A single batch only make ~ 12 cookies, I’m sure your family will want to enjoy more than that. Have a great weekend, and happy baking!         We finally made the cookies and they come out delicious!. We found that the Coasun gives a feeling of lightness and it also gives us the feeling of an easier digestion. Thanks a lot for taking the time to convert the recipie. Cups are easy to measure when one has not too much time to bake! and beside, I find that after a day at work, the last thing I want to do is look at a scale to measure 122g.
